Sweet Orange Blondies

 
Ingredients:

2 cups oat flour

1/4 tsp salt

2 tsp baking powder

2/3 cup + 1 tbsp coconut oil

2/3 cup granulated sugar

3 tbsp orange juice

3 tbsp orange zest

1/2 orange, thinly sliced

2 tbsp simple syrup, optional
Directions:

Preheat your oven to 350. In a bowl, cream sugar and coconut oil using a mixer, then add orange zest and orange juice.

Cream again for 2 to 3 minutes or until the mix is fluffy and lightly orange colored.

In a another bowl, whisk flour, cornstarch, salt and baking powder.

Gradually add dry ingredients to wet, fold in to combine.

Line a 8" × 8" baking pan with parchment paper, cut it to fit just the bottom.

Grease the sides with coconut oil or butter.

Lay orange slices on the bottom of the pan, layering them so they cover the entire bottom.

Add batter and spread it out evenly with a spatula.

Bake at 350 for 25 to 30 minutes or until you can insert a toothpick and it comes out clean.

Let blondies cool for 15 minutes, then flip the pan over to remove the blondies.

Peel the parchment paper off orange slices, (note they will look slitly burnt, that is ok)!

If you'd like, use a brush glaze the tops of the orange slices with simple syrup.

(This is totally optional but makes the blondies gorgeous)! Slice and serve. Enjoy!
