Sweet and Spicy Meatballs


For the Meatballs

2 pounds ground beef, or other ground meat of your choice.

1 small sweet onion, diced very fine

4 cloves garlic, minced

3/4 cup panko breadcrumbs

2 eggs

2 tablespoons BBQ sauce

1 1/2 teaspoons ground ginger

1 1/2 teaspoons sea salt

3/4 teaspoons black pepper

For the Sauce

1 cup apricot jam

2 tablespoons soy sauce

1/4 cup BBQ sauce

For the Meatballs

Pre-heat oven to 400 and put a rack in the middle position.

Line a baking sheet with foil and spray with oil.

Mix together the meatball ingredients.

Shape meatballs into 1" balls.

Place on the prepared baking sheet.

Leave enough space between the meatballs so they don't touch.

Bake 25 minutes.

For the Sauce

In a bowl, whisk together all of the ingredients, then set aside.

When the meatballs are done cooking, toss gently in the sauce until completely coated.

Top with any as desired: chopped peanuts, cashews, almonds, pecans, chives, green onions or Sriracha sauce.

Serve with steamed rice or riced cauliflower. Enjoy!
