Spinach Stuffed Pork Chops

These stuffed pork chops will surprise you with the creamy filling. Yum!

Ingredients:

4 pork chops: bone-in or boneless - use thicker chops

4 tablespoons olive oil, divided

1/2 small onion, finely diced

4 cloves of garlic, minced

3 cups of fresh spinach

8 Oz.cream cheese, softened to room temperature

1/3 cup sour cream

1/3 cup mayonnaise

Directions:

Warm a cast iron skillet over medium heat, add oil, and when hot, add onion, cook stirring for 1 minute.

Add garlic, stir, and cook and stir for another 30 seconds.

Add spinach, stir, and cook and stir until wilted, then season with salt and pepper.

Transfer the mixture to a large bowl and set aside the pan.

Then add cream cheese, sour cream, mayo, mozzarella, parmesan, pepper flakes, and Italian seasoning in the bowl.

Taste and adjust for salt and pepper.

Cut pockets in the thickest part of the pork chops using a sharp knife, not all the way through.

Stuff with the spinach and cheese mixture.

Put the cast iron pan back on the stove, add 2 tablespoons of olive oil, and heat over medium heat.

Once hot, add pork chops and cook for 4 to 6 minutes per side.

Cook in batches, two at a time until golden and cooked through. Enjoy!
