Shrimp Scampi


2 pounds jumbo shrimp, peeled and de-veined, thaw if frozen

2 tablespoons light olive oil

1 teaspoon sea salt

1 teaspoon pepper

2 large cloves garlic, crushed and chopped

4 tablespoons unsalted butter, softened

Pinch freshly chopped parsley, for topping

Lemon wedges, for squeezing over shrimp. (optional)

Preheat the oven to 350. Put shrimp in a plastic bag and toss with the olive oil.

Place shrimp on a baking sheet, season with salt, pepper and garlic.

Roast 6-8 minutes, until shrimp are pink and cooked through.

Add butter directly on the hot baking sheet, stirring until melted.

Transfer shrimp and butter sauce to a platter and top with fresh parsley.

Serve with lemon wedges.
