Quick and Easy Vegan Chili

Ingredients:
1 red onion, chopped
2 garlic cloves, minced
1 green bell pepper, seeded and diced
one 15 Oz. can of crushed tomatoes
Two 15 Oz. cans black beans, with juices
4 Oz. diced green chilies
1 teaspoon cumin
1/8 teaspoon cayenne
1/2 teaspoon chili powder
2 Tablespoons water, for sauteing

Directions:
Heat water in a large pot.
Add chopped onion, garlic and bell pepper.
Saute on high heat, stirring often, for 5 minutes or until onion is translucent.
Add water as needed.
Add crushed tomatoes, beans and their liquid, chilies and spices, then stir to combine.
Simmer, stirring occasionally, for 15 minutes, until flavors are blended. Enjoy!
