Quick and easy Pizza Soup


2 tablespoons olive oil

2 onion, chopped

1 cup mushrooms, sliced

1/2 cup bell peppers, diced

2 cups tomatoes, diced

1/4 cup olives, sliced

2 cups beef stock

2 cups pepperoni slices

1 teaspoon dried basil

2 cups mozzarella cheese, shredded

Heat the oil in a large saucepan over medium heat.

Add the onion, mushrooms and bell pepper.

Cook, stirring frequently, until the vegetables are soft.

Add the tomatoes, beef stock, olives, pepperoni and basil.

Cook, stirring occasionally, until all is heated through.

Ladle the soup into bowls, then top with cheese Enjoy!
