Pepperoni Pizza Soup


1 lb. mild Italian sausage

16 Oz. fresh sliced mushrooms

1 sweet onion, chopped

1 large green bell pepper, chopped

one 15 Oz. jar pizza sauce

one 14.5 Oz. can petite diced tomatoes, undrained

one 5 Oz. pkg. miniature pepperoni slices

1 tsp. Italian seasoning (to taste)

2 cups water

1/2 to 2/3 cup parmesan cheese

mozzarella cheese, shredded, for garnish

fresh oregano, for garnish

In a large pan on medium heat, saute sausage, and breake apart with a wooden spoon to crumble, until no longer pink, while cooking for 5 minutes.

(Do not drain grease).

Add mushrooms, onions and bell pepper and saute for 5 minutes, stirring frequently, until veggies soften.

Add pizza sauce, tomatoes, pepperoni, Italian seasoning and water.

Cover with lid and heat through about 10 minutes.

Stir in parmesan cheese and heat through.

Ladle soup into bowls and garnish with shredded mozzarella cheese and fresh oregano. Enjoy!
