Peanut Butter Espresso Brownies

Ingredients:

1/3 cup olive oil
1 large egg
2 tablespoons espresso powder
One 17.6-ounce box brownie mix
3/4 cup peanut butter chips
1/4 teaspoon coarse sea salt

Directions:
Preheat the oven to 350.
Spray an 8-by-8-inch baking pan with nonstick spray.
Whisk together 1/3 cup water, olive oil, egg and espresso powder.
Add brownie mix and stir until blended.
Stir in peanut butter chips.
Transfer batter to the prepared baking pan.
Sprinkle sea salt evenly over the top.
Bake until a toothpick inserted into the brownies comes out with a few moist crumbs attached, 35 to 40 minutes.
Cool completely before cutting into squares.
