Oven Fried Chicken


12 Chicken thighs

3 Eggs

1 Cup flour

1 Cup Italian bread crumbs

Salt and pepper to taste

1 Teaspoon paprika

1/2 Cup olive oil

Preheat oven to 350.
Place flour in a shallow pie tin and season with salt and pepper to taste.
Put bread crumbs in another pie tin and beat the eggs in another pie tin.
Dredge chicken in flour, egg and bread crumbs.
Pour olive oil into a 9" x 13" baking pan.
Add chicken to the pan and sprinkle with paprika.
Bake for 30 minutes, turn pieces over and bake for 30 minutes.
Remove from oven and drain on paper towels.
