Lemon Tart with Berries

This Lemon Tart is deliciously gluten-free and easy to make. A light, summery tart topped with strawberries, and blueberries. Yum!

1/4 cup vegan butter

1 tablespoon coconut sugar

1/8 teaspoon sea salt

For the Lemon Filling:

1 cup lemon juice

1/4 cup cornstarch

1/2 cup rice malt syrup

1/4 cup coconut oil

2 lemons, zested

2 cups coconut milk

For the Berries:

1 pint fresh strawberries, sliced or cut in half

1/2 pint Blueberries

For the Glaze:

1/3 cup red currant jelly

2 tablespoons water
