Lemon Mousse


For The Mousse:

1 Cup heavy whipping cream

1 Cup lemon curd

8 Oz cream cheese, softened

1 Cup powdered sugar

1/2 Teaspoon vanilla

2 Drops yellow food coloring, optional

For The Crust:

4 Graham crackers, crushed

2 Tablespoons sugar

2 Tablespoons butter melted

For The Moose:

Beat whipping cream until stiff.
Remove to a different bowl and set aside.
In the mixer bowl, beat the lemon curd and cream cheese together, until smooth.
Add the powdered sugar, vanilla, food coloring, and mix until smooth.
Gently fold in the whipped cream using a spatula, until blended.

For The Crust

Mix graham crackers, sugar and butter.
Scoop the mixture into six serving dishes and top with mousse.
Refrigerate until ready to eat.
