Instant Pot Pulled Pork Sandwiches

This is the most flavorful pulled pork recipe to make in about one hour. Yum!
Ingredients:
4 lbs. pork shoulder roast, in 4 pieces, fat trimmed off
1 tablespoon smoked paprika
1 tablespoon brown sugar
1/2 tablespoon cumin
2 teaspoons sea salt
1/2 teaspoon pepper
2 tablespoons olive oil
1/2 cup apple cider vinegar
1/2 cup water
Your favorite Barbecue sauce

1 tablespoon brown sugar
1/2 tablespoon cumin
2 teaspoons sea salt
1/2 teaspoon pepper
2 tablespoons olive oil
1/2 cup apple cider vinegar
1/2 cup water
Your favorite Barbecue sauce
Directions:
Put paprika, brown sugar, cumin, salt and pepper in a bowl and stir to combine, then season the pork with spices on all sides.
Press the Sauté button on the Instant Pot, then add olive oil, when heated add pork.
Brown on each side for 1 to 2 minutes, working in batches if necessary, then remove pork.
Add vinegar and water to the pot and deglaze the bottom.
Add pork back to the pot and secure the lid, then set to High Pressure for 1 hour
(It will take 15 minutes for the Instant Pot to pressure up).
When the pork has cooked for 1 hour, quick release pressure and remove lid when safe.
Remove pork with a slotted spoon and put on a cutting board.
Shred with a fork and put in a bowl, then remove excess fat.
Toss with your favorite warm barbecue sauce. Enjoy!
