Hearty Cabbage Soup


1 pound ground beef 1/2 teaspoon fine sea salt 1/4 teaspoon pepper 1 yellow onion, chopped 4 tablespoons butter, divided 1/2 head cabbage, cut into 8 wedges and sliced thickly one 8 Oz. can chopped tomatoes - not drained 28 Oz. crushed tomatoes 3 cups beef broth 1 tbsp Italian seasoning 2 cups rice, cooked

In a pot over medium heat, cook and crumble ground beef.

Drain and set aside.

Add two tablespoons butter and onion then saute until tender.

Remove and set aside with ground beef.

Add 2 Tablespoons butter and cabbage then cook until tender and cabbage starts to wilt.

Add ground beef and onion to the pan.

Add crushed tomatoes, beef stock, chopped tomatoes and italian seasoning then simmer 20 minutes.

Add cooked rice before serving and season to taste. Enjoy!
