Grilled Feta Cheese with Spinach Sandwiches

Ingredients:
1/2 Tbsp olive oil
1 clove garlic, minced
1/4 Lb. frozen chopped spinach
1 pinch salt and pepper
4 slices sourdough bread
2 Tbsp mayonnaise
4 slices mozzarella cheese
1 Oz. crumbled feta cheese
1 pinch crushed red pepper (optional)
1/2 Tbsp olive oil

4 slices mozzarella cheese
1 Oz. crumbled feta cheese
1 pinch crushed red pepper (optional)
Directions:
Add olive oil and minced garlic to a large fry pan.
Saute over medium heat for one minute, then add frozen spinach (no need to thaw), and salt and pepper.
Continue to saute over medium until most of the moisture has evaporated from the pan.
Put 1 slice of mozzarella on 1 slice of bread, per sandwich.
Top the mozzarella cheese with feta cheese.
Divide cooked spinach between the sandwiches, then top with 1 slice mozzarella and a pinch of crushed red pepper flakes.
Top each sandwich with the second slice of bread.
Spread mayonaise over top side of each sandwich.
Flip the sandwiches over and place in your fry pan.
Spread mayonaise over top side of each sandwich.
Heat the pan on medium low.
Cook sandwiches on each side until golden brown and crispy and warm and gooey on the inside.
Cut sandwiches in half and serve. Enjoy!
