Ingredients:
2 1/4 cups Unbleached All-Purpose Flour
1 cup old-fashioned oatmeal*
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 1/4 teaspoons baking powder
heaping 1/2 teaspoon table salt
15 tablespoons unsalted butter, melted
*Or substitute 1 cup of Rolled Oats
For the Filling:
2 cups blueberries
1/2 cup blackberries
1/2 cup raspberries
1/2 cup light brown sugar, packed
3 tablespoons Unbleached All-Purpose Flour
lemon zest and 2 tablespoons fresh lemon juice
1/2 teaspoon cinnamon
pinch of table salt
For the Topping:
1 1/2 teaspoons granulated sugar
1/4 teaspoon cinnamon
Directions:
Preheat your oven to 375 with a rack in the center.
Line a 9" pan with parchment, then lightly grease.
In a large bowl, whisk together the ingredients except the butter.
Use a spoon to crush brown sugar lumps, then add butter and stir until combined.
Pour 2/3 of the dough (About 2 2/3 cups) into the pan then press into an even layer.
For the Filling:
In another bowl gently mix the filling ingredients until the berries are evenly coated.
Transfer the fruit to the pan and distribute it into an even layer.
Crumble the remaining dough over the berries evenly.
For the Topping:
In a small bowl, combine the ingredients, then sprinkle the topping and cinnamon sugar evenly over the bars.
Bake for 50 to 55 minutes, covered with foil if the top is browning too quickly, bake until the berries are bubbling and the topping is golden.
Let the bars cool completely in the pan for 1 1/2 hours.
Remove the bars from the pan using the parchment as a sling, then slice and serve. Enjoy!
