Fresh Fig Cake


1 cup plus 2 tbsp coarse ground semolina

1 cup sugar

1 tsp baking powder

1 tsp grated orange zest

Pinch Sea salt

1 cup Greek yogurt

3/4 cup milk

3/4 cup melted butter, cooled

2 tbsp lemon juice

8 figs divided – 6 chopped up for the cake , 2 sliced for decorating the cake

Preheat your oven to 350, then and line and grease a 9 " cake pan.

Mix semolina, sugar, baking powder, orange zest and salt in a bowl.

Add yogurt and milk in another bowl and mix until combined.

Mix all ingredients, followed by butter and lemon juice.

Fold in chopped figs and pour batter into the cake pan.

Bake cake until golden brown and firm, 55 to 65 mins.

Let cake cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Dust cake with powdered sugar and decorate with fig slices and optional pansy flowers. Enjoy!
