Easy Low Carb Keto Pizza

 
 
Ingredients:

For the Crust

1 1/2 cup Mozzarella cheese, shredded

2 tbsps Cream cheese, cut into cubes

2 large Egg, beaten

1/3 cup Coconut Flour

For the Sauce

(Note: Optional, use a can of your favorite sauce to save 30 minutes of cooking time.)

2 onions, diced

1 garlic clove, peeled and crushed

2 tbsp olive oil

2 cans chopped tomatoes

1 tbsp unsweetened tomato puree

2 tsp Italian herb mix

Salt and pepper to taste

Pizza Topping Ideas

8 Oz. Pepperoni, sliced

1 Lb. Sausage, cooked and crumbled

1/2 Lb. Canadian bacon, sliced

1 small can Pineapple chunks

8 Oz. Mushrooms, sliced

1 Bell peppers, sliced

1/2 Onions, sliced

1/4 Lb. Broccoli florets

1 Lb. Asparagus, sliced

1/2 Lb. Chicken, cooked, shredded

1 jar of Artichoke hearts, diced
Directions:

For the Crust

Preheat the oven to 425, then line a baking sheet or pizza pan with parchment paper.

Combine shredded mozzarella and cubed cream cheese in a large bowl.

Microwave for 90 seconds, stirring halfway through.

Stir again at the end until well incorporated.

Stir in the beaten eggs and coconut flour.

Knead with your hands until a dough forms.

If the dough becomes hard before fully mixed, you can microwave for 10 to 15 seconds to soften it.

Spread dough on a baking pan to 1/4" or 1/3" thickness, use a rolling pin over a piece of parchment.

Use a fork to poke holes throughout the crust to prevent bubbling.

Bake for 6 minutes, then poke more holes as needed.

Bake for 3 to 7 more minutes, until golden brown.

For the Sauce

(Optional)

Saute onion for 10 minutes or until onions have softened.

Add garlic and saute for 30 seconds more.

Add tomatoes and herbs and simmer for 15 minutes.

Add tomato puree and simmer 5 minutes.

Add salt and pepper to taste.

Use a blender, blend to a smooth consistency.

To assemble the Pizza

Top Pizza with sauce and your favorite toppings.

Return pizza to the oven and bake an additional 10 minutes

Remove pizza and let cool slightly, slice and serve, Enjoy!
