Easy Cheesy Baked Manicotti

This authentic Italian manicotti recipe is easy to make! Yum!
Ingredients:
14 manicotti pasta shells, one 8 Oz. package
3 cups spaghetti - marinara sauce
2 tbsp butter, cut into small chunks
For the Filling
4 tsp olive oil
1 onion, diced
2 garlic cloves, minced
1/2 lb ground beef
1/2 lb ground pork
1/2 tsp sea salt
1/2 tsp pepper
15 oz whole milk, ricotta cheese
3 1/2 cups mozzarella, shredded
1 cup Parmesan cheese, grated
1/4 cup parsley, chopped
1/4 tsp ground nutmeg

For the Filling

1/2 lb ground pork
1/2 tsp sea salt

3 1/2 cups mozzarella, shredded
1 cup Parmesan cheese, grated
1/4 cup parsley, chopped
1/4 tsp ground nutmeg
Directions:
In a fry pan on medium heat, add 2 teaspoons olive oil, onion, garlic, ground beef and pork.
Season with salt and pepper, then brown the meat for 5 minutes.
Remove from heat and allow to cool to for mixing with cheese filling.
Cook manicotti in a pot of salted boiling water for 6 minutes.
Drain then toss with a little olive oil to keep from sticking and allow to cool.
For the Filling
Combine ricotta cheese, 2 cups mozzarella cheese, 1/2 cup Parmesan, parsley and nutmeg.
Mix well and stir in cooled meat into the cheese mixture, then set aside.
Preheat the oven to 350, drizzle 2 teaspoons of oil in a 13" x 9" baking dish to coat.
Spoon 1 1/2 cups of sauce over the bottom of the dish.
Either place all of the meat/cheese mixture in a Ziploc bag and cut off one corner to squeeze filling into shells
Or carefully spoon filling in each manicotti by hand.
Arrange manicotti in a layer on the dish and spoon the remaining sauce over.
Sprinkle 1 1/2 cups of mozzarella cheese and 1/2 cup of Parmesan over the pasta.
Divide the butter pieces evenly over top.
Bake the manicotti, uncovered, for about 30 to 35 minutes.
Let the manicotti stand 5 minutes before serving. Enjoy!
