Easy Breakfast Pizza

 
 
Ingredients:

1 cup 5 oz all purpose or white, or whole wheat flour

1 1/2 teaspoons baking powder

1/2 teaspoon sea salt

1 cup non-fat Greek yogurt

fresh baby spinach

1/2 cup mozzarella cheese, shredded

8 cherry tomatoes, sliced

4 large eggs

2 strips bacon, cooked and chopped
Directions:

Preheat oven to 450.

Line a baking sheet with parchment and spray with olive oil.

Combine flour, baking powder, salt and whisk to mix.

Add yogurt and stir with a fork until combined, it will be small crumbles.

Dust flour on a work surface and knead dough 20 turns (it should not leave dough on your hands).

Divide into 4 balls about 3 oz each.

Dust work surface and rolling pin with flour, then roll dough out into ovals of 7" to 8" in diameter and put them on your baking sheet.

Top with spinach, mozzarella and tomatoes, leave the center open for an egg.

Break an egg into the center of each dough oval and top with bacon.

Bake 10 to 12 minutes, until the crust is golden and the egg is set.

Season with salt and pepper.
