Cucumber Lime Mint Popsicles

Ingredients:
1⁄3 cup pure maple syrup
2 tablespoons fresh lime juice
1⁄2 teaspoon lime zest
2 tablespoons fresh mint chopped
1 cucumber peeled, cut into chunks
1⁄3 cup pure maple syrup
2 tablespoons fresh lime juice
1⁄2 teaspoon lime zest
2 tablespoons fresh mint chopped

Directions:
Allow at least 4 hours to freeze the ice pops if you are making this recipe from start to finish in one day.
For the Mint Syrup
In a saucepan over high heat, bring maple syrup, lime juice, lime zest and 2⁄3 cup water to a boil.
Remove from heat; stir in mint, then cool for 10 minutes.
For the Popsicles
In a high-powered blender (or food processor), puree cucumber and mint syrup until smooth.
Pour into 6 ice pop molds., then freeze until pops are completely frozen, about 4 hours.
To Serve
Run molds under warm water to help release ice pops.
Store any leftover ice pops in ice pop molds in the freezer for up to 5 days. Enjoy!
