Creamy Tuscan Chicken


1½ pounds boneless skinless chicken breasts, sliced thinly

2 Tablespoons extra virgin olive oil

1 cup heavy cream

1/2 cup chicken broth

1 clove garlic, crushed and minced

1 teaspoon italian seasoning

1/2 cup parmesan cheese, shredded

1 cup spinach, chopped

1/2 cup sundried tomatoes

In a large fry pan add olive oil and cook chicken on medium high heat for 3 to 5 minutes on each side or until brown. Remove chicken and set aside.

Add cream, chicken broth, garlic, italian seasoning and parmesan cheese.

Whisk over medium high heat until it starts to thicken.

Add spinach and sundried tomatoes, then simmer until the spinach starts to wilt.

Add chicken back to the pan and stir to coat.

Serve over pasta if desired. Enjoy!
