Creamy Asparagus Soup


2 lbs Asparagus, trimmed

1 Tbsp butter

1 Onion, chopped

6 Cups chicken broth

2 Tbsp sour cream

Salt and pepper

Melt butter over low heat in a large pot.
Add onion and cook until transparent.
Cut the asparagus in half and add to the pot.
Add chicken broth and pepper, to taste.
Bring to a boil.
Cover and cook low 20 minutes.
Remove from heat.
Save a few asparagus tops.
Add sour cream.
Puree until smooth.
Top with asparagus pieces.
