2 egg whites
1 cup powder sugar
½ tsp cream of tartar
1/3 cup rainbow coated chocolate chips
Black, blue, and pink gel food coloring
Directions:
For the Cookies
Mix butter and sugar until smooth in a mixing bowl.
Add all 4 eggs at one time, then add vanilla and mix.
Sift four, baking powder and salt together, then add to wet mixture.
Continue mixing to make sure all ingredients are thoroughly blended.
Make dough into a ball, wrap it in cling wrap completely covering the entire dough ball.
Chill for 2 hours or overnight, then check to see if the dough is firm.
Preheat your oven to 325, then whil the oven heats up, pull the cookie dough out of the refrigerator and let sit it out to warm up a bit.
Roll the dough out on the cutting board and using a round or circle cookie cutter, begin to make your cookies.
You can just cut round cookie shapes or you can get creative and cut some stars too.
Line your cookie sheet with parchment paper, then using a metal spatula move cookies to the cookie sheet.
Bake at 325 degrees for 8 minutes, then check to see if the cookies are thoroughly baked.
Take the cookies off of the cookie sheet and put on a wire rack to cool completely. (10 minutes).
For the Icing
Combine all ingredients in a mixing bowl mixing on medium speed for 4 minutes. (except your food coloring)
If icing is not stiff enough add 1/4 C powder sugar.
Divide the icing between 4 bowls.
In the first bowl put 1/4 of icing leaving it white.
Add several drops of black gel food coloring in the second bowl of icing (about 1/4). Stir well to mix the color.
Add several drops of blue gel food coloring in the third bowl of icing. Stir well to mix the color.
Add several drops of pink gel food coloring in the fourth bowl of icing. Stir well to mix the color.
Spoon each color of icing into individual frosting bags with a #5 tips.
Twist the open end of the bag to push the icing to the tip.
1/3 cup rainbow coated chocolate chips
For the Basic Design
Outline each of the cookies in black icing.
Next go around the cookie several more times in the black.
Leave the nearest area to the black untouched at this time.
Go around the cookie several times in the blue icing.
Fill in the area between the black and blue with pink icing.
Fill in the center of the cookie with white icing.
Using a toothpick, dip into one color and drag it to blend the other colors.
Continue to repeat this process until all colors throughout the cookie has been pulled together.
Add numerous small dots throughout the cookie to look like stars.
Sprinkle rainbow coated chocolate chips over the tops to look like planets
Allow the cookies to dry from 2 hours. (This is easy if you make them at the end of your day and let the kids eat a few then let the rest dry over night). Enjoy!
