Chunky Monkey Cookies

 
 
Ingredients:

¾ cup coconut oil, melted

¾ cup brown sugar, packed

¼ cup sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

pinch of sea salt

1/4 cup chopped pecans (optional)

2 cups semi-sweet or dark chocolate chips
Directions:

Preheat oven to 350, then line a baking sheet with parchment paper.

Beat oil, sugars, egg and vanilla medium until combined.

Add the flour, pudding mix,baking soda and salt, then beat just till combined.

Stir in chocolate chips and pecans if using them.

Use your hands and form 12 balls of dough.

Chill this dough for 30 mins in freezer, covered or place in fridge to chill for a few hours.

Put cold dough on baking sheet.

Bake 10-12 minutes, remove from oven and let rest 5 minutes, then put on wire rack to cool for 5 minutes. Enjoy!
