Chocolate Oatmeal Cookies

 
 
Ingredients:

12 ounces dark chocolate, chopped into chunks

8 ounce package cream cheese, softened

1/2 cup butter, softened

1 cup firmly packed brown sugar

1/2 cup coconut sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

3 cups quick cooking oats

1 cup dark chocolate chips

1 cup pecans, chopped

powdered sugar, optional
Directions:

Put dark chocolate chips in a bowl and microwave for 1 minute 30 seconds on half power.

Stir and microwave in 30 second intervals, stirring in between, until completed smooth and melted, then set aside to cool.

Meanwhile, beat cream cheese, butter and sugars until creamy.

Add eggs and vanilla, then beat well, and add melted, slightly cooled chocolate, then mix again until combined.

Combine flour, baking soda and salt.

Add oats, dark chocolate chips and nuts, then stir to combine.

Add dry mixture to chocolate mixture and stir until combined, then cover and chill 1 hour. Heat oven to 350. Shape dough into 1-inch balls, then place them 2" apart on parchment paper-lined pan.

Flatten balls slightly. Bake 10 to 12 minutes or until cracks begin to form on the top and cookies are almost set and still soft on top.

Cool for 1 to 2 minutes on the pan, then transfer to wire a rack to cool, then sprinkle with powdered sugar.
