Chocolate Chip Cake


For the Cake

12 tablespoons butter, at room temperature

1 1/4 cups light brown sugar

1/2 cup sugar

3 large eggs

2 teaspoons vanilla extract

1 3/4 cups flour

1/2 teaspoon baking powder

1/2 teaspoon fine sea salt

1/2 cup milk

12 oz mini semisweet chocolate chips

For the Frosting

8 oz cream cheese, at room temperature

6 tablespoons butter, at room temperature

3 cups confectioners' sugar

1 1/2 teaspoons vanilla extract

Chocolate chips, for finishing

For the Cake

Preheat the oven to 350. Grease a 9-inch pan with olive oil spray.

Cream together butter, brown sugar and sugar until light and fluffy, 4 minutes.

Add eggs, one at a time, and add vanilla and mix to combine.

Whisk together flour, baking powder and salt.

Add half of the flour mixture to the wet ingredients and mix.

Add milk and mix to combine.

Add remaining flour mixture and fold in the chocolate chips.

Pour batter into a pan and bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes.

Cool for 15 minutes inside the pan, then invert onto a cooling rack to cool completely.

For the Frosting

Cream together cream cheese, butter and confectioners’ sugar until light and fluffy, 3 minutes. Add vanilla and mix to combine.

Put cake on a serving platter. Pile frosting on top and then smooth into an even layer. Top with a sprinkling of chocolate chips.
