Chicken with Prosciutto and Sage


4 chicken breast halves, pounded thin

sea salt


30 fresh sage leaves, divided

8 slices prosciutto

1/4 cup avocado oil

2 tablespoons unsalted butter

4 cloves garlic , minced

Place 2 chicken breasts in a large zip lock bag and pound to equal thickness.

Remove and repeat with remaining chicken breasts.

Season chicken with salt and pepper to taste.

Top each breast with 5 sage leaves and wrap in 2 slices of prosciutto.

Secure prosciutto to the chicken with wooden toothpicks.

Heat olive oil in a large fry pan over medium high heat.

Once hot, place chicken sage side down into oil and cook for 4 minutes.

Turn the chicken, add butter, garlic and remaining sage leaves.

Cook for 3 minutes, basting the chicken with garlic, sage and butter in the pan.

Serve immediately with a drizzle of the butter left in your pan. Enjoy!
