Ingredients:
10 - 12 cups of popped popcorn
3/4 cup butter
1 cup brown sugar, packed
1 tsp vanilla
1 tsp fine sea salt
1/4 tsp baking soda
1/2 cup peanuts (optional)

Directions:
Pre-heat oven to 250 with racks in the upper and lower third of the oven.
Line two baking sheets with parchment paper.
Put popped popcorn in a large, heatproof bowl and set aside.
Melt the butter in a pot.
Add brown sugar, then stir and boil 4 minutes.
Remove the pot from the heat.
Stir in vanilla, salt, baking soda and peanuts (optional).
Pour 1/3 of the caramel onto the popcorn and stir.
Repeat twice with the remaining two thirds of caramel.
Continuing toss popcorn until coated.
Pour popcorn onto baking sheets and bake 1 hour, stir every 15 minutes.
Let cool before eating. Enjoy!
