Cabbage Stoup


1 lb. sweet Italian sausage

1/2 tsp. sea salt and pepper

1 1/2 cups onion, chopped

1 tbsp. garlic, chopped

6 cups cabbage, chopped

One 14.5-oz. can diced tomatoes (not drained)

1 1/2 cups canned crushed tomatoes

1/2 cup celery, chopped

Bring a large soup pot sprayed with olive oil to medium-high heat.

Add sausage and 1/4 tsp. each salt and pepper.

Cook sausage and crumble until browned, 4 minutes, then add onion and garlic.

Cook, stir and crumble until sausage is cooked and onion is soft, 5 minutes.

Add remaining ingredients and 1/4 tsp. each salt and pepper.

Add 3/4 cup water, then stir well and bring to a boil.

Then reduce heat to low, cover and simmer, until cabbage is soft, about 20 minutes, uncovering occasionally to stir. Enjoy!
