Banana Nutella Muffins


1 cup mashed bananas

2 eggs

3/4 cup coconut sugar

1/3 cup coconut oil

1 teaspoon pure vanilla extract

3/4 cup unsweetened almond milk

1 3/4 cup flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1/3 cup Nutella

Preheat oven to 350.

Put paper liners in a muffin pan.

Mash bananas with a fork.

Add eggs, sugar, oil, milk, vanilla, and whisk until combined.

Add flour to the wet ingredients, then sprinkle baking powder, baking soda and salt over the flour.

Stir gently until dry ingredients are incorporated into wet ingredients.

Divide batter evenly between muffin cups.

Heat Nutella in the microwave for about 20-40 seconds.

Place a heaping teaspoon of Nutella on top of the batter and swirl well with a toothpick.

Bake in the middle rack of the oven for 15-20 minutes.

Cool in the pan for 10 minutes, then remove from pan and cool completely.
