Baked Cod Fish

 
 
Ingredients:

1.5 Lb. Cod fillets, 4 pieces

¼ cup parsley leaves, chopped

For the Lemon Sauce

5 tbsp lemon juice

5 tbsp olive oil

2 tbsp unsalted butter, melted

5 garlic cloves, minced

For the Coating

⅓ cup all purpose flour

1 tsp coriander

¾ tsp paprika

¾ tsp cumin

¾ tsp fine sea salt

½ tsp pepper
Directions:

Preheat your oven to 400.

Mix lemon juice, olive oil and melted butter in a bowl, then set aside.

In another bowl, mix flour, spices, salt and pepper, then set next to the lemon sauce.

Pat fish dry, then dip into lemon sauce, then flour mixture.

Shake off excess flour.

Save lemon sauce for later.

Heat 2 tbsp olive oil in an iron skillet over medium-high heat (watch the oil to be sure it is shimmering but not smoking).

Add fish and sear on each side for 2 minutes, then remove the skillet from heat.

To the remaining lemon sauce, add minced garlic and mix, then drizzle over fish fillets.

Bake fish for 10 or until the fish flakes easily.

Remove from the heat and sprinkle fish with chopped parsley. Enjoy!
