Chicken Pumpkin Pizza

Servings: 2, 4 pizza slices each
This recipe has healthy ingredients combined in a fun, family-friendly way. Yum!
Ingredients:
2 packages (7.5 Oz. each) frozen cauliflower pizza crust
(or 2 pre-baked 12" thin whole wheat pizza crusts)
1 tablespoon olive oil
3/4 cup cubed cooked pumpkin
2 chipotle peppers in adobo sauce, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups cubed cooked chicken
1/2 cup chunky salsa
1 1/2 cups shredded mozzarella cheese
1/4 cup thinly sliced red onion
Minced fresh cilantro (optional)
Directions:
Preheat your oven to 425.
Place crusts on un-greased baking sheets, then brush with oil.
Combine pumpkin, minced chipotle peppers, salt and pepper, then spread over crusts.
Combine chicken and salsa, then spoon over pumpkin layer.
Top with cheese and red onion.
Bake until edges are lightly browned and cheese is melted, for 12 to 15 minutes.
Let stand 5 minutes before cutting, then If desired, sprinkle tops with cilantro. Enjoy!
