Peanut Butter Oatmeal Chocolate Chip Cookies are easy grain and refined sugar free cookies.
Ingredients:
1 cup natural peanut butter (made of only peanuts and salt)
1/2 cup coconut sugar
1 large egg
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
1/2 cup rolled oats, for a chewier texture
1/3 cup dark chocolate chips
1 teaspoon flaky sea salt
1 cup natural peanut butter (made of only peanuts and salt)
1/2 cup coconut sugar
1 large egg
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
1/2 cup rolled oats, for a chewier texture
1/3 cup dark chocolate chips
1 teaspoon flaky sea salt
Directions:
Preheat the oven to 350 degrees, then line a baking sheet with parchment paper.
Put peanut butter, sugar, egg, baking soda and vanilla in a bowl then beat on medium speed with a hand mixer until combined.
Stir in oats and dark chocolate chips.
Use a 1 1/2" cookie scoop, scoop the batter and place on the baking sheet about 1.5" apart.
Flatten cookies slightly with the palm of your hand.
Bake for 10 minutes, then remove from oven and sprinkle the cookie tops with sea salt and cool on a wire rack.
