Stir-Fried Pork with Noodles

 
Ingredients:

1 1/4 pounds pork boneless loin

1 teaspoon cornstarch

1 teaspoon soy sauce

1/4 teaspoon salt

1/8 teaspoon pepper

2 tablespoons vegetable oil

2 large garlic cloves, chopped

1/4 teaspoon crushed red pepper

2 medium celery stalks,

cut into 1/4" diagonal slices (1 cup)

1 small bell pepper, cut into 1" pieces

2 cups bean sprouts (4 Oz.)

4 ounces fresh mushrooms (1 1/4 cups)

2 cups cooked vermicelli, (4 Oz. dry)

3 green onions, sliced

1 tablespoon soy sauce

peanuts and chopped cilantro (optional)
Directions:

Trim fat from pork, then cut into strips, 2" x 1" x 1/8".

Toss in cornstarch, and 1 teaspoon of soy sauce, then add salt and pepper.

Cover the pork and refrigerate for 20 minutes.

Heat a wok or skillet over high heat, then add oil, and rotate the wok to coat sides.

Add pork, garlic, and red pepper, then stir-fry for about 5 minutes or until pork is not pink.

Add celery and bell pepper, then stir-fry for 2 minutes.

Add celery and bell pepper, then stir-fry for 2 minutes.

Add sprouts and mushrooms, then stir-fry for 2 minutes.

Add vermicelli, onions, and 1 tablespoon of soy sauce, then toss for 2 minutes.

Top each serving with peanuts and cilantro. Enjoy!
