Pumpkin Chocolate Chip Cookies


1 cup unsalted butter, at room temperature

1/2 cup brown sugar

1/2 cup sugar

1 cup pumpkin puree

1 ½ vanilla

¼ cup applesauce

⅛ teaspoon salt

1 teaspoon cinnamon

1 teaspoon baking soda

2 cups flour

1/2 cup pecans, chopped

1 cup dark chocolate chips

Preheat your oven to 350, then line a cookie sheet with a silicone mat or parchment paper.

Mix butter and sugars until creamed.

Add pumpkin, vanilla and applesauce, then mix well.

Add salt, cinnamon, baking soda, flour and mix thoroughly.

Fold in chocolate chips and pecans.

Scoop a generous spoonful of cookie dough and flatten with a spatula.

Bake for 12 to15 minutes, until golden orange color.

Allow to cool before serving. Enjoy!
