Grilled Salmon with Starfruit Salsa


1 pound wild salmon cut into 4 pieces

1 1/2 teaspoons lime juice

1/16 teaspoon sea salt

1/4 teaspoon honey

1 large starfruit large seeds removed, diced

1 small jalapeno pepper seeded and minced

2 tablespoons red onion finely diced

2 tablespoons fresh cilantro minced

1 teaspoon olive oil

Preheat grill to high, then pat salmon with paper towels to dry.

Allow fish to dry while continuing with the rest of the recipe.

Whisk together the lime juice, salt, and honey.

Add the star fruit, jalapeno, onion and cilantro, then gently toss to mix.

Taste and adjust seasoning if necessary, then cover and refrigerate until you serve.

Rub salmon with olive oil, then season generously with salt and pepper.

Put fish on preheated grill, then turn grill to low and close the lid.

After salmon is partially cooked through (3 to 4 minutes), turn and continue cooking with grill closed until desired doneness is reached, (3 to 4 minutes).

Serve salmon with salsa.
