Easy Beef Tacos

 
 
Ingredients:

For the Taco Filling

1 tablespoon avocado oil

1 lb. lean ground beef

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon paprika

½ teaspoon garlic powder

½ teaspoon dried oregano

½ teaspoon salt (or to taste)

¼ teaspoon ground black pepper (or to taste)

2 tablespoons tomato paste

¼ cup beef broth or water

To Assemble the Tacos

2 medium tomatoes, diced

1 medium red onion or white onion, diced

¼ cup fresh cilantro, finely chopped

¼ cup sour cream (optional)

1 lime, sliced into wedges

Shredded or crumbled cheese of choice
Directions:

For the Taco Filling

Heat oil in a large fry pan on medium high heat, until oil sizzles.

Add ground beef and stir well to cook evenly until browned, for 6 to 8 minutes.

Break up beef into small pieces for even browning.

Add cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, tomato paste and beef broth.

Reduce heat to medium and simmer for 3 to 5 minutes until the sauce thickens, stirring occasionally.

Turn off heat and set beef aside.

To Assemble the Tacos

Heat flour tortillas according to directions, or heat in an ungreased fry pan over medium heat for 30 seconds per side.

Add 2 to 3 tablespoons of beef mixture on each tortilla.

Top with cheese, onion, tomato and cilantro.

Add some sour cream and a squeeze of fresh lime juice, to taste. Enjoy!
